Cookies during the holidays is a must! We always make chocolate chip or snickerdoodle as well as decorating sugar cookies, but sometimes I want more! Sometimes I want a cookie filled with so much deliciousness that I can barely stand it. Do you ever have that craving too? Well let me tell you, I have the answer for both of us. These Cherry and White Chocolate Chip Pistachio Cookie recipe has all the good things.
One single cookie has sweet, melty, chewy, salty and crunchy all inside a soft baked cookie. Can you even believe it? It’s literally the perfect cookie. Santa will love them, your mother in law will love them (hopefully) and your kids might even like them!

The Perfect Holiday Cookie
This recipe makes between 2 and 3 dozen cookies, depending on the size you choose to make. It will take about 15 minutes to put the ingredients together but this dough MUST be chilled for 2 hours in the fridge. This is the time you could start another batch of cookies, like our Ginger Snap cookies.
First, gather up the ingredients that you will need. That is:
2 cups flour
1 stick + 2 Tbsp butter
2/3 cup sugar
1/3 cup white chocolate morsels
1/3 cup chopped pistachios
1/3 cup chopped dried cherries
1 egg
½ tsp salt
Additional items needed:
stand mixer
cookie cutters
Now it is time to start making the cookies.
Combine flour and salt in a small bowl.
Beat together butter and sugar until creamy. Add the egg and blend.
Add the flour mixture and blend on low speed until incorporated.
Add white chocolate, pistachios, and cherries. Blend until combined.
Wrap dough in plastic wrap and place in the refrigerator for at least 2 hours.
Roll dough to 1/8” thick and cut out shapes.
Bake at 325° for 12-15 minutes or until edges are just golden.
